The signature isn’t a specific cocktail but a craft: the team’s own in-house lab develops fermentations, infusions, and processes, and the menu rotates seasonally around those. What to order
Ask the bartender for an interpretation of whatever classic you’d usually drink — they’ll rebuild it. The D. Pedro (gin, beetroot, port, heart-shaped glass) is the canonical signature for first-timers. Downstairs lounge for the board-game menu if you have 90 minutes.
